Sunday Dinner – Herb crusted pork roast
Pork Rib Roast encrusted with Fresh Herbs
1-3 lb pork rib roast
Mixture of chopped fresh rosemary, flat leaf parsley, thyme and a couple of leaves of sage. These were all taken from my patio garden – probably came to 1/3 of a cup. To this I added 1 clove garlic and 1 tsp lemon zest and 1 Tbs olive oil and salt and pepper to taste. Combine all in a shallow dish.
Pat the roast dry then roll around in the dish pressing the herb mixture in so it covers all sides. Place into an oven safe pan or roaster and place into a 375 preheated oven. Roast for 1 – 2 hours.

Both the garlic and the lemon zest are obtained by using my micro plane – this is a must have tool for the Arthritis Kitchen and when used eliminates the need for any chopping. A micro-plane is super lightweight and is very versitile.
