Chicken with Asian Inspired Orange Glaze

This was last nights dinner.  Whenever I can, I try to incorporate foods that have properties that are beneficial to my RA.  This recipe utilized star anise as today’s RA supporting ingredient.

Chicken with Asian Inspired Orange Glaze

4 bone in chicken breasts

1/3 cup each:
Soy Sauce, Marmalade, Orange Juice, Green Onion – chopped

1-2 garlic cloves – smashed

1 tsp lemon zest

1 star aise **

Combine marinade ingredients in a small pot or sauce pan. Bring to a simmer, reduce slightly – aprox. 4 min. Remove the star anise and discard before using.

Meanwhile, sear chicken breasts on both sides until nicely browned on both sides.

Arrange browned chicken pieces in a glass baking dish. Spoon sauce over reserving 1/3 for the end.

Bake @ 375 for 40 min
Spoon over remaining sauce in the last 10 min to form a glaze.

**Star Anise is said to be beneficial for arthritis and rheumatism.
