Chicken Sausage and Vegetable Skillet Dinner

Tuesday after the long weekend came at me with full force.  Work was hectic, traffic was a beast and my knee has been giving me trouble all day.  Decided to make something quick and easy. This budget friendly, easy to prepare meal is  also  low carb.  I have leftovers for lunch tomorrow.

  • 1 pkg chicken sausages
  • 1 Tbs Olive oil
  • 1 red onion
  • 2 small zucchini
  • 10 med size mushrooms
  • Seasoned with ginger powder, soy sauce and black pepper.

I first brown the sausages  on all sides then add 1/4 cup water, cover and simmer til done, at least 10 min up to 20 depending on type.  For the veg, I first brown the mushrooms, remove then saute the zucchini and red onions.  Return mushrooms to the pan, add seasoning.  Really easy, good tasting  and low carb to boot.
