Grilled Veggies for Dinner
Taking advantage of the return of nice weather I decided to use the grill. I had some portobello mushrooms and asparagus so that’s what went on. I’ve been on a real citrus kick these days so topped the mushrooms with copious amounts of lemon zest (thank you handy microplane), olive oil and salt and pepper. The asparagus had real woody ends so I peeled them first. I tossed the asparagus in a bit of olive oil, some coarse salt and of course, a squeeze of lemon. A glass of wine and some good bread made for a terrific easy meal.
