Savoury Rice

Savoury Rice dish is an old family favorite from when I was growing up.  It’s a baked rice dish with cottage cheese, cheddar, onions and herbs.  Serve warm or room temperature.

 

 

 

 

1 cup rice, cook then set aside

1 egg

1/8 – 1/4  c. cooking oil.

1/2 c. cottage cheese

3/4 c. grated cheddar cheese

3/4 c. milk

1/2 c. very finely chopped onion

2 Tbsp. dried parsley

1 tsp. dried basil

S& P and paprika to taste.

Cook rice – set aside. Beat egg, gradually add oil, cottage cheese and 1/2 cup grated cheese, onion and beat well. Stir in milk. Add rice and seasonings.

Mix well. Bake at 350 for 30 min. then sprinkle with remaining cheese and brown in oven for a short time.

Arthritis Kitchen Tip: I modify this recipe these days by adding turmeric in place of or along with the paprika.  Turmeric is a well documented anti inflammatory that has been around for centuries. It is the bright yellow ingredient that gives yellow mustard its color. The flavor is not at all spicy, similar in heat to sweet paprika and it lends itself well to many dishes.  The health benefits, especially for RA has me using turmeric quite frequently in my cooking.
